Not sure what you guys were doing with S2D but Azure, and many other datacenters, use S2D. Were you using Windows Server Datacenter with Storage Spaces? That does matter. That's where the enterprise version of Storage Spaces comes to light.
Anyways if you were, you can adjust the CSV cache which I see as the problem if you were using S2D, not Storage Spaces.

Tried time and time again to run either Unraid or TrueNas, which in theory are great. Unraid has locked my hardware and refuses to connect to the internet through the onboard 1Gb nics even tho it recognises them. TrueNas works but i get constant network issues/sharing issues using 10Gbe marvel cards.. DrivePool works a treat

Bunch of bad ZFS choices:
a)dataset compression: there's no reason to turn it off, if the data is incompressible ZFS won't try to compress it.
b) raidz with so many drives: even though they aren't mechanical drives, there's a non-zero chance to lose another drive during resilvering. Considering it's nvme and how many drives available I'd choose at least raidz2 here
