Recipe:
Ingredients:
1 pound of ground beef
1 pack taco seasoning
½ cup of water
3 cups tortilla chips or strips
1 cup jarred salsa
1 12 ounce can sliced jalapeno peppers, drained
1 cup shredded cheese, taco blend or cheddar
1 2 ounce can sliced olives, drained
2 roma tomatoes, diced, for topping
1 bunch cilantro, chopped
1 ripe avocado, diced, for topping
Sour cream for topping, optional
Instructions:
1. In a medium skillet over high heat, cook ground beef until crumbly and no longer pink, approximately 6-8 minutes. Drain off fat.
2. To the ground beef, add taco seasoning and ½ cup of water. Bring to a simmer and reduce heat to low. Cover and simmer 10 minutes. Drain excess liquid.
3. Line the air fryer basket with a piece of foil large enough to cover the bottom completely and come up 2-3 inches on the sides.
4. Place ½ of the tortilla chips in the foil lined basket, keeping them in as much of a single layer as possible.
5. Distribute ½ of the ground beef evenly over the chips and drizzle with ½ of the salsa. Top with ½ of the jalapeno peppers.
6. Sprinkle ½ of the cheese and top with ½ of the olives.
7. Repeat the layer with the rest of the chips, beef, salsa, jalapeno peppers, cheese and olives.
8. Place the basket into the air fryer and set the temperature to 380 degrees.
9. Cook for 3 minutes then check to see if the cheese is melted and the chips are crisp. Add an additional 1-2 minutes, if necessary.
10. Remove from basket using the foil and transfer to a plate (or eat right out of the foil!)
Top with tomatoes, cilantro, avocado and sour cream.
