Custom builds, you price it up and take 50% deposit minimum, no questions. Some shops I've dealt with require full price on parts with labour and overheads to pay on collection. Just be clear on the final "as built" price, and get a signature.
In my opinion taking a deposit for a build and not paid in full is high risk.

For sure you should ask for deposit on the parts at least. The way I do it with my repair shop, I get the deposit on all the parts and the labor i charge after its done.
Nope, get total value not deposit before you start building or you will get burned. That was a scam 100% Or they buy all the parts and pay you a fee to put it together.

custom should pay 100% up front, mail order/web order companies do that as standard operating proceedure, you quote them a firm price, they pay for it and you deliver when it's built
Have them buy the parts and have you assemble.

For these older laptops they're mostly going to be used for regular use i.e email, youtube, facebook. I would run a light linux distro. That 2gb RAM would go a lot further vs running Win10 32 or 64bit. These customer will be very happy to get more life out of their rig for sure. I miss the days of windows 98 gaming on a CRT. Wish I could find a good CRT local for cheap but people ask $300+ as they are rare and people want them. Its hard to believe there was a time, very recently, when people couldn't pay you to take their CRT 😛

deposit sound reasonable to me. you are a shop, not a home builder.
that system covered in Soda is gold, you could of ultrasonic cleaned them then dried out and i bet it all works. you could get the lot for $50, when motherboards detect a short they turn off to prevent damage, (unless its ASROCK), I've cleaned coffee covered laptop motherboards and they come back to life.
unless the parts are special order, you only need to collect say $50 as deposit and rest on collection. any brand new parts need to be paid ahead unless its a simple SSD or somthing.
Perfectly acceptable to ask for a deposit. Especially if it’s a custom build. Gotta protect yourself and your business.

Nice to see old tech get a fresh lease on life with a ssd much like old desktops, always best to stay well away from any sticky water damage as the water would be fine as long as had a decent psu, But when is also sticky and wet then it is most likely to have sugar, corn syrup or both. Also if the system was on then would have shorted out, if was off and not dried before turning on then again would have shorted out but may have fried something if the sugar/corn syrup/sticky substance had made contact with something on the board with power running through it, again many factors with best case being fried board and worse being dead system. They should try the card in another pc to see if that works then can do same with cpu as I believe that board is dead.
You should look into keeping a small stock of older parts like ddr3 sodimms, so you can offer super cheap upgrades for older machines. For instance that laptop would run a ton better with 8 or 16gb of ram and could have sold it for like $15-$20 on top of the SSD upgrade. Or possibly free for the potential customer return and additional sales. Zooplankton gang, 🪼

type msconfig and set the max cpus, and type in performance settings and change to "set for best performance."
also man if you haven't already get some cheap hard drive dock Like a multi combination one, IDE SATA , laptop desk top etc. so you can pull info of the old hard drives. That way you can charge for Data recovery also 🙂
SSD conversion is easy. Then maybe do the ram if u can find old gear. Change the thermal paste on the CPU but i wouldn't be ripping them all apart save the dramas
Older laptops were built to service. Newer stuff meant to throw away pretty much 😅 Absolutely ask for a deposit if they want you to buy all the parts upfront.
